Last weekend, TikTok was packed with video clips of sunshine-y influencers pouring balsamic vinegar into glasses of fruit-flavored sparkling water until eventually the concoction commenced to look vaguely inky. This, they mentioned, was a “nutritious Coke.”
I have a tendency to be skeptical about the way in which culture at massive — and a selected ilk of women’s magazines, in individual — try to rebrand fully standard components as substitutes for dishes considered too decadent i.e. contacting uncooked, crispy pieces of lettuce “lettuce chips” or boasting that an apple topped with almond butter and miniature chocolate chips is a “fruit cupcake.”

The selection of folks smiling with their glasses of sparkling balsamic vinegar, having said that, appeared to be an indication that the concoction was superior, refreshing even. That is not the circumstance.
Now, to be obvious, I love cocktails with a vinegary twist. I actually have two shrubs — a peach-rosemary and a mixed berry mix — prepping in my kitchen appropriate now. Heck, I even like a splash of apple cider vinegar in my early morning glass of ice water just to wake up the ol’ taste buds.

What is enjoyable, however, is a cocktail or mocktail that takes the notion of a fresher, cooler Coke and executes it in a way that is truly drinkable. In this scenario, that’s a gin spritz with a balsamic-cherry shrub.
A shrub is fundamentally a drinking vinegar, made by combining fruit, sweetener and vinegar to develop a “syrup” that can be employed to taste cocktails. It has a seriously desirable sweet-sour, pretty much sweet-like (you know, pricey fruit sweet) flavor to it which is ideal when blended with effervescent soda water and a refreshing gin.
Recipe: Gin Spritz with Balsamic-Cherry Shrub
45 minutes, as well as chilling
For the shrub:
For the cocktail:
- 4 ounces gin (See Cook’s Notes)
- 2 ounces cherry shrub
- Splash soda water
- Cherries for garnish
- In a little saucepan, incorporate the cherries, balsamic vinegar and white sugar — as well as ample water to protect the whole mixture. Carry the mixture to a boil, then minimize to a continual simmer for 10 minutes.
